However some salts are formed by the climate, as sea water washed up in shallow patches and then dried by the sun it leaves behind crystals of salt
As the sea water evapourates the salt is formed like flower petals, hence the term Fleur de Sel - Flowers of Salt
This can be found in many areas of the world, this is Portuguese - Algarve Sea Salt, known locally has Flor de Sal

Harvests start in mid summer as the sea water retreats in the Ria Formosa and Sapal do Castro Marim nature reserves in Southern Portugal before they sink to the bottom
Removing the salt blossoms by skilled traditional farmers leaving a soft Fleur de Sel Salt that can be crumbled in your fingertips
